Spring is in the Air

Spring is in the Air

The ground is still wet from the melting drifts of snow but the smell of spring is definitely in the air!  Thus it's no surprise that our Chefs in The shore Club kitchen are very excited at the sight of spring and the fresh seasonal ingredients to come.   During the spring months, we are showcasing spring bok choy as our seasonal vegetable option.



Maple syrup will be in full swing at the sugar bush, which gives us Chefs the opportunity to showcase a special dish we hold close to our roots. Our Maple Glazed Salmon is a perennial favourite and around March we are able to really appreciate the sweet smell of the maple syrup caramelizing in our pans. It's a smell that reminds us of how proud we are of our Canadian culture.  Consequently we try and incorporate it onto our menu whenever we can.



As we see our fresh halibut come in whole, we sharpen our knives to show the utmost respect to this beautiful fish. Preparing halibut is an art that our Chefs have perfected, carefully cutting eight-ounce portions for our Pan Seared Halibut with Coconut-Kefir-Chili-Lime Drizzle and Forbidden Rice.  Because of the popularity of this dish and our guests' appreciation for high quality fish, our chefs really enjoy receiving our fresh halibut and making this a beloved everyday routine.



There is something very personal about cooking for me and our team of chefs, constantly creating and passionately preparing food for our guests at The Shore Club.  Our Canadian Prime whole rib is a point of pride, and meticulously cutting our one-pound rib steaks sits in a special place in our Chefs' heart. Come in and try our rib steak, our Chefs' favourite cut, prepared to a perfect medium and charred just enough to start to melt the fat away.
