NOTES FROM THE BAR SIDE #3: THE SPICED APPLE SAGE HOT TODDY

 Welcome back ! Hope everyone is staying warm these days.  Walking home from work certainly hasn’t been very fun lately. 

 
The Shore Club has recently rolled out its new Winter 2019 cocktail menu. We kept a couple of our favourites like “The Razors Edge” and “Cranberry Eastsider”, plus we’ve brought back some classics from years past like “The Creamsicle” and our very talented Sommelier Allison Vidug’s Late Night Sipper. But, since it’s not the warmest out there we’ll be talking about one of my favourite winter cocktails, our “Spiced Apple Sage Hot Toddy”. 
 
This drink features a homemade spiced apple cider sage syrup. It’s made up of apple cider, fresh sage, whole cloves, whole black pepper, whole coriander, cinnamon and sugar. We then add a delicious apple brandy named Calvados Boulard, and just a little bit of fresh lemon juice. It’s served hot, in a snifter glass and garnished with a lemon wheel and fresh sage. It’s a full bodied cocktail that will warm you up with the first sip. One of my favourite parts of this drink is that you can taste all the ingredients, the apple cider, all the different spices, the fresh sage and of course the brandy! All the flavours complement each other quite well. 
 
I originally started making this drink a couple of years ago when I worked at The Fifth Ticket Restaurant and Piano Bar in St. John’s, NFLD. It was slightly different back then but the premise was still the same. For the idea I had a lot of help from the BOH team, in particular our sous chef Nick King. He was the one who originally made an apple cider and sage syrup, and it was delicious. We thought it would make a great base for a hot toddy. After a couple years of tweaks we finally came down to a recipe everyone is very happy with. 
 
Now we have The Shore Club’s “Spiced Apple Sage Hot Toddy”. Come down and try one today - we promise you won’t regret it.
