Welcome back everyone! We are here with another instalment of what I like to call “Notes From The Bar Side” which is a online blog that talks about the bar program at The Shore Club Toronto, what drinks we are currently serving and what we may do down the line. This is my fourth entry for the blog and today we’ll be talking about one of our newest additions, The Toronto Fog. 
The idea for this cocktail came from a couple of different sources. First and foremost it came from my girlfriend, for the last couple of months she’s been on a huge London Fog kick. She’s a big fan, and in all honesty the majority of the cocktails we come up with are based on real life foods and drinks that we like and think “how can we make this alcoholic?” And the second source is I’ve seen some cool places online using tea as the base for cocktails and it seemed pretty interesting. So we gave it a go.  
This cocktail comprises of chilled earl grey tea as a base, with lemon juice, an in-house made vanilla bean syrup, Jameson’s Irish whiskey and one of my favourite liqueurs, Rumchata. We also garnish the top with earl grey tea leaves that are candied with pineapple sugars. 
This drink is an explosion of flavour, and you can taste every ingredient each time. Creamy but light, a little hint of bergamot, lemon and jasmine.
